THE TASTIEST GHANAIAN JOLLOF RECIPE (HOW TO BAKE YOUR JOLLOF RICE)

This dish has nostalgia written all over it. Apart from the inclusion of purple Cabbage (instead of the normal pearl looking ones), this was a meal prepared during my childhood with my Mum.
The difference in this Jollof was the type of meat used.
During the famine season of the 80’s in #Ghana (hands up if you remember it) #Mum used dried cured beef for her Jollof rice. The flavour was rather unique and I recreated it today.
