Schezwan sauce is basically a Chinese sauce... It is very spicy and hot...
15 red chilies ( presoaked for 1 hour) deseeded 20 cloves of garlic 2 tbsp grated onions 1 tbsp grated ginger 2 tbsp tomato sauce 1/2 tbsp crushed black pepper 3 tbsp vinegar 1 tsp sugar 1 tsp soya sauce 1 tbsp salt 4-5 tbsp
put a pan on high flame and add 4-5 tbsp oill.more oil is neede as oi act as a preservative. add garlic and saute it low flame till it get golden in colour. transfer the garlic into a bowl and et it cool. transfer the red chillies and garlic into a mixing jar.. blend it. add turn on the flame and add onions in the same pan. add ginger and saute it for 1 minute. now add red chilli and garlic paste. saute it well for 5 minutes. add a little water,sat sugar black pepper and soya sauce.mix well when the oil starts seperating add tomato sauce and vinegar. mix well. add half cup of water to make a saucy texture. cook it on low flame for five minutes. turn off the flame and let it cool. transfer it into air tight container and store it into fridge for 15-20 days.
