Onion and Bacon Soup | Everyday Food with Sarah Carey

Two of my favorite foods are cheese and bacon, and both are combined in the soup I m going to make for you today. What, you love cheese and bacon, too? Then try our take on a classic French onion soup, with the addition of bacon to make it heartier and that much tastier. But it still has the hallmarks of the classic: luscious caramelized onions and bubbling Gruyere-topped baguette slices sitting on top. What a way to warm up a cool night.

Sarah s Tip of the Day:
It does take a little time to get this soup right. They key to those deep-golden-brown caramelized onions is cooking them long and low. Watch the video and I ll clue you in on how to adjust the heat and tell you the best pot to use to get the darkest caramelization possible. I ll also let you know the best time to season the soup (it s not when you think). Enjoy!
