How to make a classic lamb roast with Mal the Coles butcher

Nothing beats a classic lamb roast. This tender lamb is baked with rosemary and garlic, making it even more flavoursome (RECIPE BELOW). Served with potatoes and steamed greens, it will have everyone gathered around the table.

Serves 8 Prep 35 mins Cooking 2 hours 30 mins

2.6kg Coles Australian Lamb Whole Leg Roast
1/4 cup (60ml) extra virgin olive oil
2 garlic cloves, cut into small strips
2 whole garlic bulbs, halved horizontally
3 rosemary stems, cut into small sprigs
4 rosemary stems, extra
Roasted potatoes, to serve
Steamed green beans and snow peas, to serve

1. Preheat oven to 200°C.
2. Using a small knife, make slits all over lamb. Rub oil over lamb. Season well. Place 1 piece of garlic and 1 small sprig rosemary in each slit. Place extra rosemary, halved garlic bulbs and lamb in a disposable baking tray. Roast for 2 1/2 hours for medium or until cooked to your liking.
3. Transfer lamb to a plate and cover with foil. Set aside for 20 mins to rest. Serve lamb with potato and beans.
