Hi Foodies! Ukoy or Okoy is a popular Filipino fritter made from shrimp and vegetables. There are many varieties of Okoy and mine is packed with vegetables. It s crispy on the outside, soft and fluffy on the inside. Taste vegetables in a different way-crisp and tangy. Served with vinegar dipping sauce or catsup, it is good as appetizer main meal.
