Lentils with Egg and Greens | Everyday Food with Sarah Carey

Do you plan out your meals for the whole week? Confession time: I know I should — but I don t. I start out strong with plans at the beginning of the week, but by Thursday, I m often out of fresh ingredients and winging it. That s why I always have long-lasting staples in my pantry and fridge. They let me make a great dinner even when I think I have nothing in the kitchen! Here s one of my favorites: lentils and greens topped with a fried egg. Quick, easy, delicious.

Recipe Ingredients:
2 diced carrots
2 cans (15 ounces each) cooked lentils
A bunch of greens, such as spinach and arugula, (about 4 cups for 4 people)
A handful of cilantro, or basil (optional)
4 eggs
Olive oil
1 small onion
2 diced carrots
Salt and pepper
A few garlic cloves
